Dexter Cattle

Dexter cattle are one of the oldest heritage cattle breeds, originating in the rugged Kerry region of Ireland. Bred to thrive on marginal land, Dexters were valued for their hardiness, efficiency, and ability to provide high quality meat without excess. That history still shows today. They are a true working breed. They are adaptable, resilient, and deeply connected to the land they graze.

Our Dexter heifers come from sky ranch in Washington, a program that shares our commitment to sound genetics, strong structure, and cattle that are meant to live well on pasture. Bringing these girls home wasn’t just about adding cattle to our farm. It was about continuing a lineage built on stewardship, purpose, and respect for the animal.

In the pasture, Dexters are calm, intelligent, and incredibly efficient grazers. Their smaller size allows them to move lightly across the land while still maintaining excellent body condition. They thrive on grass, integrate beautifully into rotational grazing systems, and are easy to manage without sacrificing strength or presence. Watching them work a field is a reminder that cattle don’t need to be oversized to be powerful.

When it comes to meat quality, Dexter beef is where heritage truly shines. The beef is known for its rich, beef forward flavor, fine marbling, and tender texture. This beef is second in the world only to Wagyu. Because Dexters grow at a natural pace and finish well on grass, the result is beef that is deeply satisfying without being overly fatty or bland.
